G D Goenka School of Hospitality celebrated ‘World Chefs Day’ with an interesting panel discussion on “The Changing Profile of Chefs over the Decades”. The concept behind the event was to trace how the role of a chef has undergone a major transformation. From primarily a back-of-the-house department, Chefs in recent years have come to the forefront of restaurant and hotel business.
Chefs were always talented and committed to their craft. But today they are marketers, PR persons, brand ambassadors and spokespersons of their outlets-all rolled into one. They are articulate, media savvy and smart. To essay this shift, two leading chefs, who define this new-age version of chefs were invited to the University- Chef Nishant Choubey, Executive Chef, Dusit Devarana, New Delhi and Chef Anahita Dhondy, Chef Manager, Soda Bottle Openerwala.
In an informal chat show with the students they described their adventurous journey. They answered wide ranging questions from students pertaining to their inspirations, favourite cuisines, challenges of the industry, time management, creativity and innovation. Chef Nishant gave an interesting insight into New World Cuisine such as Peruvian, African and Modern Indian. Chef Anahita emphasised the need for research and curation of ancient and lost recipes. Both the chefs traced their incredible career path and shared their vision and wisdom freely.
The students learnt a lot from their anecdotal accounts. The event was summarized aptly by Prof. Y G Tharakan, Dean of School of Hospitality as he spoke on the significance of this great day for the culinary world in the vote of thanks. It was a day of great learning, sharing and celebrating the genius of great chefs. It also paved the way for the next generation of chefs at G D Goenka School of Hospitality who are eagerly waiting in the wings.
